Blond brownies

This recipe is not raw but when I saw it in a Finnish lady’s blog I thought that I really have to try this recipe!Because truly the ingredients are interesting and these are very healthy brownies!I just love the taste!I thought it would be also a nice snack for my sons but for them the fact that the main ingredient is chickpeas is too strage!Yes,truly these blond brownies are made of chickpeas but you would never tell so from the taste!So these blond brownies are very healthy;low in calories, rich in omega-3s, and gluten-free… And the recipe is very easy so try to make them;you’ll be surprised!

– 3 cups chickpeas (2  cans, drained and rinsed- or you or you can cook the chickpeas by yourself)

– 3/4 cup cashew nuts

-3/4 cup brown sugar or coconut sugar (or even stevia is good!)

– 2 tsp vanilla extract

– 1 tsp baking soda

– 3 tbsp virgin coconut oil

Blend all ingredients  until very smooth in a food processor,

and scoop into a greaseproof paper lined pan; 20cmx20cm  (8×8).

Bake for around 30 minutes (175°C) or until until the surface gets a little color.

They’ll look a little undercooked when you take them out, but they firm up as they cool.
